Our journey begins with sourcing the perfect blend of fruit from local apple and pear growers who share our passion. The right blend of fruit is critical to producing an authentic cider, and we take great care to only use fresh, handpicked apples and pears, and select varietals that deliver a full-bodied, natural flavour to create our cider.

Once we’ve sourced our fruit, we start the pressing process. We use traditional methods to press the apples, which allows us to capture the full flavour and character of the fruit. We never use concentrates or add sugars, allowing our cider to showcase the pure, crisp taste of real apples and pears.

After pressing, our cider is fermented using carefully selected yeast strains that enhance the flavour and aroma of the cider. Our fermentation process is done slowly, allowing the cider to develop its unique character and flavour profile. We monitor the process closely, testing the cider at every stage to ensure that it meets our high quality standards. We also prioritise sourcing apples that might be considered “ugly” or not visually perfect, which helps to reduce food waste and support sustainable agriculture.

We work directly with local orchards to source our apples, which reduces transportation emissions and supports our local community. By sourcing our apples locally, we also minimise the need for refrigeration and reduce the carbon footprint associated with transportation.

In addition to sourcing our apples sustainably, we also use eco-friendly production practices that minimise waste and conserve resources. For example, we use a closed-loop system to recycle water and minimise water waste, and we compost our apple pomace and other organic waste to create nutrient-rich soil amendments. We also use lightweight packaging materials and minimise the use of plastics in our packaging wherever possible.
